more than to be able to share with you some great recipes, tips and
advice on ways to make and eat delicious, easy, healthy raw food in the run up to your wedding, and for your life after your exciting event.
Since it is summer, I thought I would start by sharing one of my absolute favorite recipes. I have always been crazy about ice-cream, even in the cold weather, so discovering that making raw 'ice-cream' is super quick and easy has been a bit of a godsend. Based on fruit and berries, my raw 'Ice-Dreams', as I like to call them, are free from fat, added sugar, gluten, eggs, dairy and saturated fat and cholesterol. And even better, they taste amazing, and I really find that they keep me away from unhealthy, fattening desserts.
And they really are quick to make. I usually find myself whipping up a batch when my boyfriend pauses a movie we may be watching to go and rummage in the freezer for an ice cream. I take this as my cue to say 'give me 5 minutes...' then I throw all the ingredients into the food processor, and within a couple of minutes I am drooling over a bowl of frozen goodness, with the food processor dripping dry on the draining rack!
This version is for
Blueberry Ice Dream, but flavour combinations are almost limitless. I
also love the chocolate chip one you can find on my blog.
Enjoy this recipe, you lovely bride-to-be. Just remember not to eat this whilst trying on your dress; blueberries do tend to stain!
3 frozen bananas (slice and freeze for at least 12 hours)
1/2 cup
frozen blueberries
Small pinch of salt
1/2 teaspoon vanilla extract.
Allow the bananas to stand at room temperature for 5 minutes to soften slightly. Blend all the ingredients together in a food processor to make a soft and smooth ‘ice cream’. This may take a couple of minutes, and you will need to stop it a couple of times to scrape down the sides. Serve immediately.
Enjoy this delicious frozen desserts as it is or top with goodies such as:
• Chopped nuts (raw, not roasted)
• Dried coconut
•
Sliced fresh peaches or berries
• Fresh fruit salad
•
Chocolate chips, carob chips or raw cacao nibs
• Agave or maple
syrup
• Fresh (raw) raspberry sauce
• Nut cream
•
Chocolate or carob sauce
• Mix yellow raisins, chopped dates,
gojis, raisins – so pretty!
• Melted raw or dairy-free
chocolate. Drizzle this on your ice cream. It sets and goes
all crispy.
